Ingredients
• 1 cup cooked red lentils
• 1 cup fresh spinach
• ½ cup light coconut milk
• ½ onion, chopped
• 1 garlic clove, minced
• 1 tsp curry powder
• ½ tsp turmeric
• ½ tbsp olive oil
• Salt and black pepper
Steps
1. Sauté the onion and garlic in the olive oil.
2. Add the spices and stir for 30 seconds.
3. Add the coconut milk and cooked lentils. Simmer for 5 minutes.
4. Stir in the spinach until wilted.
5. Season and serve.
