text_direction=&#8220;default&#8220;]Eating our beloved steaks and meat products is often associated with increased cholesterol levels in the blood. Cholesterol, and especially the bad LDL cholesterol, is usually associated with the formation of plaque and deposits on organs and blood vessels, which leads to extremely pleasant conditions such as high blood pressure, heart attacks, and strokes.<\/p>\n<p>It turns out, however, that this is not the only bonus of a meat-eating diet, and the list of bonuses also includes diabetes, specifically type 2 diabetes \u2014 we will call it T2D for short, since it will be the main character in this article. To the surprise of most of us, T2D is not influenced only by sugar and processed carbohydrates, but also by animal products, especially red and processed meat. Salami drew the short straw here too. New research, conveniently for our cause, shows that:<\/p>\n<p>More meat = higher risk of developing type 2 diabetes<\/p>\n<p>More whole plant foods = lower risk<\/p>\n<p>And now we will dig a little deeper to see why this happens.<\/p>\n<h4><span class=\"ez-toc-section\" id=\"Why_does_this_happen\"><\/span><strong>Why does this happen?<\/strong><span class=\"ez-toc-section-end\"><\/span><\/h4>\n<p>We will start with how we can develop T2D<\/p>\n<p><strong>Type 2 diabetes is not caused only by sugar.<\/strong><\/p>\n<p>The main driver is insulin resistance, which develops when the body\u2019s cells stop responding properly to insulin. Meat \u2014 especially red and processed meat \u2014 accelerates several biological pathways that lead to insulin resistance and \u03b2-cell failure.<br \/>\nWe will show you the full pathway, step by step, in a scientifically detailed but hopefully easy-to-understand way:<\/p>\n<h5><span class=\"ez-toc-section\" id=\"STEP_1\"><\/span><strong>STEP 1<\/strong><span class=\"ez-toc-section-end\"><\/span><\/h5>\n<p>&#8211; Intramyocellular fat accumulation (translation \u2014 fat inside muscle cells)<br \/>\nThis is the cause of insulin resistance.<br \/>\nWhen we eat a lot of saturated fat (found in large amounts in red meat, pork, lamb, dairy products, and processed meat), fat is stored inside the muscle cells.<br \/>\nThis causes:<\/p>\n<ul>\n<li>blocking of insulin signaling<\/li>\n<li>reduced glucose uptake<\/li>\n<li>accumulation of toxic lipid intermediates (ceramides, DAG)<\/li>\n<\/ul>\n<p><strong>Result:<\/strong><br \/>\nMuscles cannot absorb glucose, which leads to sugar remaining in the blood. As a result, insulin resistance begins.<br \/>\nA very convenient surprise, or not exactly \u2014 plant fats (polyunsaturated fats) do not cause this problem.<\/p>\n<h5><span class=\"ez-toc-section\" id=\"STEP_2\"><\/span><strong>STEP 2<\/strong><span class=\"ez-toc-section-end\"><\/span><\/h5>\n<p>\u2014 Fat accumulation in the liver (hepatic insulin resistance)<br \/>\nSaturated fats also accumulate in the liver, causing:<\/p>\n<ul>\n<li>greater glucose production (gluconeogenesis)<\/li>\n<li>higher VLDL export (the diluted version of the bad hero LDL, which turns into it)<\/li>\n<li>higher fasting glucose<\/li>\n<li>higher fasting insulin<\/li>\n<\/ul>\n<p>This is why many people with type 2 diabetes also have fatty liver disease as a bonus addition.<\/p>\n<h5><span class=\"ez-toc-section\" id=\"STEP_3\"><\/span><strong>STEP 3<\/strong><span class=\"ez-toc-section-end\"><\/span><\/h5>\n<p>\u2014 Chronic inflammation from meat compounds<br \/>\nRed and processed meat contains inflammatory compounds that, on top of everything else, worsen insulin resistance:<\/p>\n<ol>\n<li><strong>Heme iron<\/strong><\/li>\n<\/ol>\n<p>&#8211; Produces free radicals, leading to oxidative stress and, as a result, inflammation<br \/>\n&#8211; It is directly toxic to \u03b2-cells and pancreatic tissue.<\/p>\n<ol start=\"2\">\n<li><strong> AGEs<\/strong> (advanced glycation end products; a more detailed explanation can be found further down in the article)<\/li>\n<\/ol>\n<p>They are found in very high amounts in grilled, fried, broiled, and processed meat.<br \/>\nThey cause inflammation and damage insulin receptors.<\/p>\n<ol start=\"3\">\n<li><strong> Nitrites\/nitrates<\/strong><\/li>\n<\/ol>\n<p>They are found in processed meat and, like free radicals, increase oxidative stress.<\/p>\n<ol start=\"4\">\n<li><strong> Endotoxemia<\/strong><\/li>\n<\/ol>\n<p>High-fat animal foods increase intestinal permeability, which is called \u201cleaky gut.\u201d In this way, bacterial toxins enter the bloodstream and trigger an inflammatory response. Ultimately, this leads to insulin resistance.<\/p>\n<h5><span class=\"ez-toc-section\" id=\"STEP_4\"><\/span><strong>STEP 4<\/strong><span class=\"ez-toc-section-end\"><\/span><\/h5>\n<p>\u2014 TMAO production (gut microbiome pathway)<br \/>\nCarnitine and choline from meat interact with gut bacteria \u2192 TMA \u2192 liver \u2192 TMAO<\/p>\n<p><strong>TMAO causes<\/strong>:<\/p>\n<ul>\n<li>impaired glucose tolerance<\/li>\n<li>inflammation<\/li>\n<li>higher risk of metabolic syndrome<\/li>\n<li>worsening of insulin resistance<\/li>\n<\/ul>\n<p>Vegans\/vegetarians do not produce significant amounts of TMAO because their gut microbes differ.<\/p>\n<h5><span class=\"ez-toc-section\" id=\"STEP_5\"><\/span><strong>STEP 5<\/strong><span class=\"ez-toc-section-end\"><\/span><\/h5>\n<p>\u2014 Stress and death of pancreatic \u03b2-cells (specialized cells in the pancreas that produce, store, and release insulin \u2014 the hormone that controls blood sugar.)<br \/>\nAs insulin resistance worsens, the pancreas tries to compensate by producing more insulin, thinking that this will fix things; apparently, sometimes even our organs fool themselves.<br \/>\nThis causes:<\/p>\n<ul>\n<li>\u03b2-cell overload<\/li>\n<li>oxidative stress in the pancreas<\/li>\n<li>apoptosis (cell death)<\/li>\n<\/ul>\n[\/vc_column_text][vc_column_text css=&#8220;&#8220; text_direction=&#8220;default&#8220;]\n<h4><span class=\"ez-toc-section\" id=\"Contribution_from_meat\"><\/span><strong>Contribution from meat<\/strong>:<span class=\"ez-toc-section-end\"><\/span><\/h4>\n<p>1. Heme iron, which, like the other substances we mentioned, increases oxidative stress in \u03b2-cells<br \/>\n\u03b2-cells are extremely sensitive to oxidative damage.<br \/>\n2. AGEs lead to \u03b2-cell dysfunction<br \/>\nThey disrupt insulin secretion and trigger inflammation.<br \/>\n3. High intrapancreatic fat content (translation \u2014 fat in the pancreas as a result of saturated fats)<br \/>\nFat accumulation around the pancreas disrupts insulin production.<br \/>\nEventually, the \u03b2-cells fail and quit their job, and congratulations \u2014 you win type 2 diabetes.<br \/>\n<strong>How does meat affect this, and how do plant foods help?<\/strong><\/p>\n<p><strong>Why does meat consumption increase the risk of type 2 diabetes?<\/strong><br \/>\nThere are several biological mechanisms that link meat \u2014 especially red and processed meat \u2014 to insulin resistance and diabetes:<\/p>\n<p>1) <strong>Saturated fats \u2192 Insulin resistance<\/strong><br \/>\nSaturated fats from meat accumulate in muscle and liver cells, disrupting:<\/p>\n<ul>\n<li>insulin signaling<\/li>\n<li>glucose uptake<\/li>\n<li>mitochondrial function<\/li>\n<\/ul>\n<p>This directly increases insulin resistance.<\/p>\n<p>2) <strong>Heme iron \u2192 Oxidative stress and \u03b2-cell damage<\/strong><br \/>\nRed meat contains heme iron, which oxidizes easily and increases cellular stress.<br \/>\nHigher iron stores are strongly associated with diabetes risk.<\/p>\n<p><strong>3) Nitrates and advanced glycation end products (AGEs)<\/strong><br \/>\nProcessed meats contain:<\/p>\n<ul>\n<li>nitrates\/nitrites<\/li>\n<li>AGEs &#8211; advanced glycation end products) are toxic molecules created when:\n<ul>\n<li>Sugar + Proteins\/Fats combine without enzymes\n<ul>\n<li>This is called glycation, a damaging chemical reaction.<\/li>\n<\/ul>\n<\/li>\n<li>Foods are cooked at high temperatures<\/li>\n<li>Especially:\n<ul>\n<li>Frying<\/li>\n<li>Grilling<\/li>\n<li>Chargrilling<\/li>\n<li>Broiling<\/li>\n<li>Barbecue<\/li>\n<\/ul>\n<\/li>\n<li>AGEs are found in much higher levels in animal foods, especially when cooked at high temperature.<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<p>They impair insulin sensitivity and promote inflammation.<\/p>\n<p><strong>4) TMAO<\/strong> (from carnitine\/choline in meat;
